A brand new wine from Marcel Sabate co-owner and winemaker at Castellroig, here with SO de Mar the concept is aromatic but bone-dry! For this truly unusual drop Muscat and malvasia are the main varieties with a touch of macabeu. The whole wine is fermented and aged in Amphora (160 and 220 liters) for roughly 2 months.

Although being a exciting new toy for many winemakers, amphoras are highly demanding as they have to be handle with care as they are utterly fragile. Sometime the earthy taste can be overwhelming, and their porosity can spoil the finished wine by increasing the acetic concentration (Volatile acidity, vinegar taste…). But don’t click away, it not the case here!

Although do not expect this wine to be conventional, but it should not scare you. Come on! It is a lovely dry white, fresh and elegantly flavored with Mediterranean fruit such as Peach, melon and apricot with gentle waxy and smoky character. Light-bodied, So de Mar will be the perfect partner for a light salads but also for grilled sardines!
