100% Chardonnay

Chablis covers around 5000 Has of vines, it is the northern most burgundy zone and, as such, one of the coolest and vineyards are not reaching the 300 meters above sea level. The Chablis zone is divided, almost in half by the Serein River. And all the grands Cru are together and are located on the northern part of the river and are roughly looking south. Generally speaking the Premiers Cru and Grands Cru are located on slopes and petit Chablis on flatter land. “Kimmeridgean soils are usually for top vineyards, and portlandian soils which are also chalk, but with higher content of clay hence not as warm are for Petit Chablis.

 

Vaillons , is a hill, located on the southern bank of the Serein River. This is a “Serious” Chablis, deeper, richer with an extraordinary balanced acidity thanks to a great job done on the lees. It should be open for great gastronomy or as a textbook chardonnay from a cool climate.
