Whole-cluster fermentation (Fermented with the stems, usually most wine-makers since the 60s prefer destemmed grapes, as it enhances fruit flavours. Whole-cluster fermentations are more delicate to operate, but if handled with talent wines stand out for their aromatic complexity : ethereal Red fruit and floral notes, with some earthy characters, and the mouthfeel is usually fresh) in neutral oak, and the aged 12 months.
The granite is light colored with large feldspar crystals (large, white, tabular rectangles in the rock), and looks similar to the grainites found in several vineyards of the Northern Rhone, specifically in Cornas and St. Joseph. The soil here is directly derived from decomposed granite. The soil is coarse-grained, very light and sandy in texture. It is greyish-brown in color (not red and iron-rich).
This year we only received 54 bottles of Rosende by Envinate. So if you are fan, do not wait too much.
