Domaine de la Rectorie is focusing on the fruit for this Banyuls, after 4 days of fermentation the wine is stabilized with alcohol, just like port!  Then the wine is aged 7 to 8 months in tanks and quickly bottled in order to offer fresh fruit character.

Although fortified, it is fetching a 17.5% of alcohol, the fruit intensity is so enjoyable and the palate is so pleasurable due to a great glyceric texture and residual sugars that balance the tannins. You will thank us for importing just small bottles, as it is so addictive you won’t notice that your bottle is finished.

You can serve it with many dishes from blue cheese to grilled foie-gras with figs or Italian-style ice-cream with caramelized raspberries.
